Seth Peterson, internationally known Permaculture chef, will be presenting about reconnecting through cooking at the 2016 HMI Gathering. Seth is a second generation urban farmer who grew up among chickens and mulch piles. He went on to gain his wealth of knowledge and culinary experience living, working and cooking in the U.S., Mexico, and Brazil over the last 25 years. Upon returning home to Berkeley to take over his mother’s urban organic garden, he came across permaculture, Holistic Management and regenerative ag. These methods gave him a framework to bring his many seemingly disparate beliefs into a coherent system and more wisely apply them to regenerate our neighborhoods, our society and our culture, and to do so at the dinner table through one of our most treasured cultural activities, through growing, cooking and eating food. Currently, he combines his twin passions–cooking and teaching–he cooks in community, re-skills people and connects them to great local farms and ranches. Through Seth’s regenerative cooking school and foodshed consulting service, the Local Larder, he teaches and consults both nationally and internationally, as he delves deeper and deeper into this endless endeavor, his life’s work.
Resetting the Dinner Table, Recreating our World: Connecting the Producer and Consumer through Cooking
Seth's presentation will focus on how we have begun to recapture the art of applying holistic design principles and strategies to ecologically minded kitchen design, local seasonal menu planning, energy systems, ‘waste’ streams, nose to tail cookery and butchery, cooking in community on the micro level but also adding up to regenerative food shed design on the macro level. The focus will be to realize that food is at the nexus of our society and culture. Both agriculture and food preparation come together to create, reshape and define our physical world and thus our reality, it has been this way since the beginning. Thus, the ways we grow, cook and eat food are the vehicle to making better more regenerative systems as we reclaim traditional knowledge and combine that with appropriate technologies to create our own future. All of the world’s problems can be solved at the dinner table as we reintegrate our kitchens and our gardens.
